Jiin Omakase is the new Japanese restaurant by the Les Amis Group that focuses on premium seafood and the finest expression of ‘omotenashi,’ the Japanese spirit of selfless, anticipatory hospitality. Head Chef Sakamoto Mitsutaka helms the counter under the mentorship and guidance of Group Head Chef Saito Makoto. In support is Sous Chef Matsuda Koichi. The trio represent a combined experience at the top levels of Japanese gastronomy in the tens of decades. Uppermost at Jiin Omakase is premium seafood harvested often at the peak of one of Japan’s micro-seasons, in a dining experience elevated by the warmly personal, attentive connection between guest and chef fostered by omotenashi.

Since 2018, Chef Saito has been a valued member of the Les Amis Group, where he led JINJO (modern sumiyaki) and Wagyu Jin (a wagyu-focused kappo-style omakase). Now as Group Head Chef, he forges vision and direction for the Japanese concepts he oversees. As mentor chef at Jiin Omakase, Saito leads the team with an ingredient-first approach shaped by his unwavering respect for seasonality and produce.

Sous Chef Matsuda brings four decades of ryokan-honed discipline to every detail – from the precise execution of each course to the seamless rhythm of service that puts guests at ease. Anchoring the hot kitchen, he oversees grilled preparations ensuring that each element emerging from the back kitchen complements the pace and flow of the counter.
